Yeah, prices have shot way up over the last 2-3 years, and not just for the big-box Amigas, even A1200 prices have got fairly silly. But people have a whole lot of love for the Amiga, it was a revolutionary machine at the time, and for many people it was their introduction to doing creative things with computers, as well as the gaming.
And retro gaming/computing is a growing hobby. There's so much new hardware and software out there for old platforms now, letting you add never-before-possible upgrades (e.g. PiStorm for the Amiga), get decent output to a modern TV, and sometimes give them shiny new cases and keyboards. Which is great if you already had a collection of retro machines, but not so much if you're trying to buy them now, with increased demand and ever diminishing supply.
