Microsoft cites "security and performance concerns" around these applications as reasons to block windows updates, which doesn't make sense to me. For example one of the apps they're blocking is StartAllBack (https://www.startallback.com/), which restores a clean functional classic start menu instead of the new one where Microsoft pushes ads. This just seems like another anti-consumer anti-competitive practice.
For now, this is the workaround:
Uninstall the software
Update Windows 11
Download the software
Before installing, change the name of the installer executable file which is typicall something like softwarename.exe and can be found in your downloads folder
