Most hobby CNC projects have only 3 degrees of freedom, whereas most high-end commercial projects have a few DOFs more.

This is not true. 5 axis mills and 9+ DOF CNC mill/turn centers exist, and they are becoming more common, however 3 axis vertical mills are still the backbone of most machine shops.

3-axis mills are the most common configuration for commercial mills (probably by a wide margin).
