No energy source [that we've discovered so far] is perfect. All have downsides. Sadly, living in denial of that fact is more popular than ever, but that's a separate topic.

The Linux kernel, glibc, V8 and nodejs are some of the most vetted software existing. Of course I trust them. If my business partner has security breach it's possible to sue them.
That is different than adding 1000 barely looked at dependencies to my JavaScript project. Every addition is another chance for an undetected security vulnerability. "It's really not that bad" is probably what Equifax thought before the magnitude of what happened was revealed.
Except outright lies and misinformation are easily disproved.
But moderation is not cheap. Zuckerberg is working what he sees as the most profitable angle, unsurprisingly, and spinning it to promote his ad company. Ad views are profitable. The fact that a hands-off policy allows the promotion of genocide in Myanmar and spreads hate and propaganda everywhere faster than ever does not matter.
Stack Overflow uses NET Core. I think the reason you don't see it in the wild as much as is because NET Core is pretty new. Stack Overflow migrated in late 2018. That's really about when NET Core became mature enough to use in production for new development, never mind legacy. Most companies feel no pressure to use NET Core - their huge amount of legacy software still works and can be maintained on NET Framework. Not to mention Windows-based tech like WPF and WinForms only just got support with NET Core 3 which was released 7 months ago. Companies with 'unrespected cost centers' as noted are especially conservative.
Names are important. For what it's worth, the name 'beef' is peculiar to me. At first I thought it was a joke language like Brainfuck or ArnoldC. Java, fish, snort and cartoon devils are not nearly as culturally charged on many levels as dead cow flesh and all it invokes both good and bad. Where do you draw the line? A programming language called 'Christ'? 'Penis'? 'Dogmeat'? I'm sure you can think of some less obviously taboo. The only people who will be offended are those who seek to be, but that doesn't mean the name doesn't matter.
