Can't comment on the Bluetooth issue, since Apple devices have the least BT issues for me by far. But for screen recording there's the cmd+shift+5 shortcut (or the Screenshot App) to do the same thing without opening Quicktime player.
It is the only platform giving these bluetooth headaches and the reason my nice BT headset sat in the closet for almost a year.
Regarding the screenshots, I've just learned these shortcuts, but if I open the screenshot tool using CMD + Spacebar + "screenshot", it often just defaults to screen recording and I see no option to switch that.
Interestingly, that are probably the only devices that work flawlessly for me. MacBook Pro in ~3 different environments, automatically pairs input devices and speakers and selects the audio I/O accordingly (i think it switches to the BT device if it was the active I/O when it was last connected). Same thing with the iPhone when paired with the Car BT. But with basically all other devices I made the same experiences. I find myself regularly reinstalling BT and audio drivers on a HP elitebook because it drops connections and can't find devices afterwards.
There are lots of reasons for choosing a small company over large ones: interest in the field, involvement in decision making, maybe more technical freedom, less bureaucracy ... I would say it depends more on the company itself than its size
